Tonight we are celbrating. I just retired on Friday, so tonight is Sunday and I am not making the 3 hour trip back to the city. Instead, I spent my usual travel time with an hour of Ashtanga Yoga and a delicious supper of Cauli-Power Alfredo (the creamy Alfredo sauce made with Cauliflower and plant based milk; a favorite of ours from Oh She Glows) and a Caesar Salad (another favorite from One Ingredient Chef). Dessert was chocolate truffles (made with dates and cashews) and a hot cup of Ginger Turmeric Bomb.
Cooking at the Ponderosa requires a bit more planning than cooking in the city. The wood stove is always fired up this time of year, but power to run the blender (for the alfredo sauce and salad dressing) can only be had when the sun shines. Luckily today was sunny, even though it was cold out. I made the sauces in the sunny afternoon. All ready to be reheated for supper.
Ken is spending the evening watching the Jets vs Ducks game and I can put the ear plugs in and meditate. Retirement is awesome.
